Chickpea Salad Sandwich

Ingredients

  1. 1 (15.5-oz.) can chickpeas (garbanzo beans), drained and rinsed
  2. 1 celery stalk, chopped (about 1/2 cup)
  3. 1/2 cup loosely packed fresh flat-leaf parsley, roughly chopped
  4. 2 tablespoons mayonnaise, plus more for serving
  5. Red onion finely chopped (about 2 Tbsp.)
  6. 1 1/2 tablespoons fresh lemon juice (from 1 lemon)
  7. 1/2 teaspoons Dijon mustard, plus more for serving
  8. 1/2 teaspoon fine sea salt
  9. Freshly ground black pepper
  10. 2-4 whole-wheat, seven-grain or sourdough bread slices, toasted
  11. Red leaf lettuce leaves

Instructions

  1. Making the Salad
    • Coarsely mash chickpeas in a large bowl with a fork.
    • Stir in celery, parsley, mayonnaise, red onion, lemon juice, Dijon, salt, and several grinds black pepper
  2. Making the Sandwich
    • Spread 1 side of toasted bread slices with desired amount of mayonnaise and Dijon.
    • Place the lettuce on each of 2 bread slices.
    • Top with chickpea salad, and cover with remaining bread slices (cutting is optional).
